Pancakes w/Maple Syrup: According to Nelix, this is B'Elanna's favorite breakfast. You know, sometimes food is like time travel, you inhale an aroma, take a bite of something, and suddenly BAM! you're back at the moment when you first tasted it. ("Workforce part II" [VGR])

Pancakes w/Maple Syrup

Ingredients

2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 3/4 cups buttermilk
2 large eggs (room temperature)
3 tablespoons melted butter
maple syrup

Preparation

In a medium bowl, combine flour, sugar, baking powder, and baking soda. In a separate bowl, whisk together eggs, buttermilk, and melted butter. Mix wet into dry ingredients.

Spoon batter onto a preheated (medium high heat), lightly greased heavy skillet or griddle. When many bubbles form on the top of the pancake, flip and cook 1-2 minutes longer

Keep pancakes warm in preheated oven until ready to serve. Serve with butter and warmed maple syrup.

Makes approximately 16 pancakes
