Ingredients:
1 cup dried red kidney beans

Preparation: Soak Beans overnight. Pour into heavy pan or Dutch oven. Add everything else (except the rice). Simmer for 3 hours or until beans are tender. Remove ham bone, cut off meat and add to the beans. Add water as necessary during the cooking (the water should barely cover the beans when done). Remove one cup of beans, and mash into a paste. Stir the mashed beans into to the stock. Stir until liquid is thickened. Serve hot over white rice.
