Quite a few items of Star Trek's cullinary experience could be expressed in sides and salads, from Kirk's diet of green leaves to Bashir's Baked Potato. As the newest member of K'Tesh's Klingon Recipe Pages, I am still working on this, and it may take some time. Enuf said, lets get eating.
Durani lizard skins: Prepared skins of the durani lizard are often found aboard Klingon ships. They were first discovered by the survors of a ill fated mission to the Durani system. ( "Star Trek: KLINGON")
Asparagus: A tera'ngan plant, often steamed, or boiled. It is available in Starfleet ration packs. Quark sold his last to Ziyal (who likes it with yamok sauce) prior to the Dominion's takeover of DS9. Tom Paris ordered some steamed (along with Terrellian pheasant, a bottle of Mouton-Rothschild, and a rose) in a last minute celebration of his and B'Elanna's first date anniversary. Ingredients 2 lbs. asparagus

Preparation Rinse asparagus under cold water and drain thoroughly. Trim tough ends. Place asparagus in a steamer basket over boiling water. Cover saucepan and steam 5 minutes or until bright green and tender.

Balsamic Vinaigrette, Light: You might like this dressing for munching on the floral arrangements while you wait for the Federation Representative to join you for dinner. I understand it is quite good with chrysanthemums. ("ST IX: Insurrection")

Preparation Combine all ingredients in blender and process until emulsified.

Preparation Spread mayo over the toast, then layer on the bacon, lettuce, and tomato slice. Cut diagonally, garnish plate with additional lettuce if desired. Enjoy!

8 cups dry bread cubes

Preparation In a small saucepan cook celery and onion in butter till tender, but not brown; remove from heat. Stir in poultry seasoning (or sage, salt, and pepper) along with the other herbs. Place dry bread cubes in a bowl, add the onion mixture. Drizzle with enough broth or water to moisten, tossing lightly with a fork. Use to stuff one 8- to 10-pound turkey.

Broccoli: A green tera'ngan plant, often steamed, or served with cheese over potatoes. Lt. Reginald Barclay is often referred by this nickname. ("Hollow Pursuits" [TNG])

1 lb. fresh broccoli

Preparation Cut broccoli into small spears. Arrange spears in a steamer basket over boiling water. Steam, covered, 5 to 8 minutes or until crisp-tender. Drain. Dice cheese, mix with broccoli until well melted, serve.

Caesar Salad: If you're being set up with the female of your dreams by a hologram, start with the Oysters Rockefeller, move on to the salad, follow it with some Chateaubriand, and finish it with Cherries Jubilee, wash it down with some Dom Perignon "55", OR you can just dance to some 400 year old songs. 5 cups torn romaine

Preparation: Allow egg to come to room temperature. To coddle egg, add egg in shell to a small saucepan of boiling water. Remove from heat; let stand 1 minute. Remove egg from water and cool slightly. Cut garlic clove in half lengthwise. Rub a large wooden salad bowl with cut sides of the garlic clove. Discard garlic. Add oil, lemon or lime juice, Worcestershire sauce, and hot pepper sauce to bowl. Break the coddled egg into the bowl. Using a fork or a wire whisk, beat till creamy. Add romaine. Toss to coat. Sprinkle with croutons, Parmesan cheese, and pepper; toss to mix. Top with anchovy fillets.

Chicken Sandwich: While guarding Deep Space Station K-7, Kirk ordered this along with coffee. The sandwich and coffee were ruined by an infestation of, ugh, tribbles. These menaces also exposed our operative.
Ingredients Corn, husks removed

Preparation Scrub ears of corn to remove silks, rinse well. Cook, covered in a small amount of lightly salted boiling water (or, uncovered, in enough boiling water to cover ) for 5 to 7 minutes or till tender. If desired, serve with butter or margarine, salt and pepper.

Corn Salad: Prepared by Neelix for Chakotay. ("Faces" [VGR])

1 lb. package frozen corn

Preparation Prepare corn according to package directions. In medium bowl, combine hot corn and all remaining ingredients; mix until well blended.

Preparation Cover onion with rice vinegar. Soak 20 minutes. Wash, dry, and tear all but Belgian endive leaves into bite-sized pieces. Arrange greens on a large platter, with endive leaves here and there. Scatter with apple and ham. Drain vinegar into a blender, adding the garlic, scallions, and mustard. With blender running, add oil to taste. Season with salt and freshly ground black pepper. Tuck onions into greens. Just before serving, drizzle dressing over the salad and finish with pomegranate.

1-1/2 lbs. green beans, ends trimmed

Preparation If you can't find peeled hazelnuts, toast them in a moderate oven until the skins loosen, then rub off skins with a kitchen towel. Hazelnut oil is available in gourmet food stores or large supermarkets; extra-virgin olive oil can be substituted. Cook beans in a large pot of boiling salted water until tender, about 5 minutes. Drain the beans and set aside. Dry the pot; add oil and heat over low heat. Add hazelnuts and cook, stirring, until golden, about 1 minute. Return the reserved beans to the pot and toss. Season with salt and pepper

Preparation Greens can be prepared from fresh or frozen products. Wash the fresh greens 2 or 3 times in clean water and drain them. Scrubbing well as they are often sandy. Cut away tough stems or discolored spots, and chop them coarsely. Place them in a pot with a slice of bacon or salt pork, and add water to half the depth of the greens. Cook covered at a slow boil for 45 minutes to an hour; add water as needed. Traditionally served with pepper sauce (pickled hot green cayenne peppers in vinegar).

Baked Potato, Sour Cream, and Chives: Dr. Bashir's ordered this with his dinner following the announcement that the wedding of Worf and Dax was called off. Served along with one steak with mushrooms, a double Altair Sandwich (no mustard) (for the Chief), two bowls of Linguini with Bajoran Shrimp and Extra Cheese, and one loaf of Mabba bread. To Drink...Kava Juice (fresh squeezed, not replicated). ("You Are Cordually Invited" [DS9])

1 Large Baking Potato (6 to 8 inches long) |
Preparation: Scrub potato thoroughly with a brush. Pat dry. If desired, for soft skin, rub with shortening, margarine, or butter; prick the potato with a fork. (Or, if desired, skip rubbing the skin. Prick potato; and wrap in foil.) Bake in a 425° oven for 40 to 60 minutes (in a 350° oven for 70 to 80 minutes} or till tender. When done, roll each potato gently under your hand. Cut a crisscross in each top with a knife. Press in and up on the ends of each potato. Top with sour cream and chives. Season with salt and pepper as desired.

Preparation Peel and quarter potatoes. Cook covered in a small of boiling lightly salted water for 20 to 25 minutes or till tender. Drain. Mash with a potato masher or beat with an electric mixer on low speed. Add margarine and salt and pepper to taste. Gradually beat in enough milk to make light and fluffy.
